This Seattle-style roast salmon celebrates the region’s love for fresh seafood, bold favors, and simple, wholesome ingredients. A quick marinade in zesty herbs, garlic, and citrus elevates simple roast fish to the star of any special occasion meal or weeknight dinner.

  1. Combine oil, lemon juice, lime juice, garlic, cilantro, scallions, oregano, paprika, cumin, 1 tablespoon salt and ½ teaspoon black pepper in a large ziptop bag or large baking dish. Add the salmon, seal the bag and gently massage the ingredients into the salmon until fully coated. If using a baking dish cover. Refrigerate for at least 20 minutes and up to 1 hour to allow flavors to marinate into salmon.
  1. Preheat the oven to 400°F/200°C. Remove the salmon from the marinade and place, skin side down, in the bottom of a HexClad Large Hybrid Roasting Pan (do not use the rack). Pour any remaining ingredients in the bag over the top of the salmon. 
  1. Bake salmon, uncovered, until medium rare or the internal temperature reaches about 125°F/50°C, about 25 minutes. Serve topped with more cilantro with lemon rounds.
