Vegemite, the quintessential Australian spread, brings a distinctive umami saltiness that elevates more than just your morning toast. When mixed with caramelised onions, it creates a rich, savory depth that’s perfect for a triple cheese toastie. This combination offers a truly authentic Aussie flavour experience that’s hard to beat.

  1. In a HexClad 12"/30 cm Hybrid Fry Pan, heat oil over medium heat. Add onions and sprinkle with salt. Cover with a lid and cook for 10 minutes, stirring occasionally.  
  1. In a small bowl, mix honey, Vegemite and water. Add to onions and cook uncovered for 8 minutes, stirring frequently until caramelised. 
  1. Mix cheddar and mozzarella to combine. Spread both sides of each bread slice with butter. Set aside. Divide cheese between 4 slices of bread. Top with onion mixture and remaining bread to make sandwiches.
  1. Finely grate Parmesan and place on a plate. Press both sides of the sandwiches into the Parmesan.
  1. Wipe the pan clean with paper towels and return to medium heat. In two batches, add the sandwiches to the pan, cover with a lid and cook until the cheese starts to melt and the bread is golden, about 3 to 4 minutes. Turn and cook uncovered until the cheese is melted and the crust is golden and crisp, about 3 minutes. Cut in half and serve immediately.
