Preparation

  1. Position a rack in the centre of the oven and preheat to 200°C (180°C fan). Generously grease a HexClad 23 x 32 cm Hybrid Oval Roasting Pan; set aside.

  2. In a HexClad 1.9 litre Hybrid Saucepan over medium heat, warm the double cream until hot but not simmering, about 5 minutes. Whisk in the garlic powder, thyme and ½ teaspoon freshly ground black pepper. Remove from the heat.

  3. Arrange a quarter of the potatoes in the base of the roasting pan in a circular, slightly overlapping layer. Season well with salt, then drizzle over one-quarter of the infused cream and sprinkle with one-quarter of the cheese. Repeat to create 3 more layers of potatoes, cream and cheese. Set aside the remaining quarter of cheese.

  4. Cover the roasting pan tightly with foil and bake for 30 minutes. Remove the foil, sprinkle over the reserved cheese, and continue baking uncovered until the top is deeply golden and the potatoes are tender, 40 to 45 minutes.

  5. Insert a skewer or small knife into the centre to check doneness; it should slide in easily with no resistance. Leave to rest for 15 minutes, then slice and serve.
