Shakshuka is a spicy North African breakfast made with eggs poached in tomato sauce. It’s typically a vegetarian dish, but this version includes meaty bits of chorizo for extra depth and flavour.

  1. Heat oil in a HexClad 10"/25 cm Hybrid Fry Pan over medium heat. Add chorizo and fry for 2 minutes, until the oils are released. Add pepper and onion, season with salt, and cook for 3 minutes, until softened. Add paprika and cook, stirring, for 30 seconds. Stir in chopped tomatoes with a splash of water to rinse out the can. Bring to a boil, cover and simmer over medium-low heat for 5 minutes.

  1. Remove the lid. Make 4 small wells in the shakshuka with the back of a spoon; add each egg to a well. Cover and cook for 3 to 5 minutes, until the whites are just set and the yolks are still soft.

  2. Remove from the heat. Scatter with crumbled feta and cilantro and serve with crusty bread.
